Summer Pear Salad
Ingredients:
4 Large pears plus 1 for the dressing
3 tablespoons of apple juice

250g of Gorgonzola cheese, chopped into cubes
100g chopped walnuts
200g of Rocket Lettuce
Method:
- Take the extra pear and peal. Blend the pear with 2 tablespoons of lemon juice
- Add to this mix the apple juice, parsley, chives and yoghurt, blend until well combined
- Slice the remainder of the pears and mix with 1 tablespoon of lemon juice
- In a salad bowl add the pears, gorgonzola cheese, and walnuts, add the salad dressing over the top, mix well and serve over a bed of rocket lettuce
Mango Chicken
Ingredients:
2 double breasted skinless chicken breasts
¼ cup of orange juice
2 tablespoons of mango chutney
2 tablespoons of lime juice
2 tablespoons of chopped parsley
2 teaspoons of grated ginger
1 tablespoon of olive oil
Pinch of dried oregano
½ teaspoon of hot pepper sauce
3 garlic cloves, crushed
Salt and Pepper to taste
Method:
- In a glass/casserole dish, place the chicken breasts, combine the rest of the ingredients and pour over the chicken, cover and place in the fridge over night
- Pre-heat your grill to a medium heat, place the chicken breasts in the grill and cook for 7 minutes each side or until cooked all the way through.
- Serve with a fresh green salad
Delicious Lime Cheesecake
Ingredients:
120g of Shredded Wheatmeal biscuits
50g melted butter
200g low-fat mango and peach yoghurt
250g low-fat smooth ricotta cheese
1 egg
2 tablespoons of caster sugar
2 teaspoons of grated lime rind
¼ cup of wholemeal plain flour
2 cups of mixed fresh fruit (strawberries, blueberries, raspberries and blackberries)
Method:
- Preheat oven to 180°. Grease a 22cm tart pan. Process the biscuits until they become breadcrumbs, add the butter and process until well combined. Press the mixture of the base of your prepared pan. Place the pan on a baking tray and put into the fridge until required
- With an electric mixer, beat the yoghurt, ricotta, egg, sugar, lime and flour until well combined
- Pour the mixture over your biscuit base. Bake for 30 minutes or until set and the edges have started to brown. Remove from the oven
- Cool the pie in the pan, cover and place in the fridge overnight.
- Serve with your mixture of fresh fruit
