Summer Pear Salad

Ingredients:

4 Large pears plus 1 for the dressing

3 tablespoons of apple juice

3 tablespoons of lemon juice

1 tablespoon of chopped chives

1 tablespoon of non-fat plain yoghurt

250g of Gorgonzola cheese, chopped into cubes

100g chopped walnuts

200g of Rocket Lettuce

  1. Take the extra pear and peal. Blend the pear with 2 tablespoons of lemon juice
  2. Add to this mix the apple juice, parsley, chives and yoghurt, blend until well combined
  3. Slice the remainder of the pears and mix with 1 tablespoon of lemon juice
  4. In a salad bowl add the pears, gorgonzola cheese, and walnuts, add the salad dressing over the top, mix well and serve over a bed of rocket lettuce

Mango Chicken

Ingredients:

2 double breasted skinless chicken breasts

¼ cup of orange juice

2 tablespoons of mango chutney

2 tablespoons of lime juice

2 tablespoons of chopped parsley

2 teaspoons of grated ginger

1 tablespoon of olive oil

Pinch of dried oregano

½ teaspoon of hot pepper sauce

3 garlic cloves, crushed

Salt and Pepper to taste

Method:

  1. In a glass/casserole dish, place the chicken breasts, combine the rest of the ingredients and pour over the chicken, cover and place in the fridge over night
  2. Pre-heat your grill to a medium heat, place the chicken breasts in the grill and cook for 7 minutes each side or until cooked all the way through.
  3. Serve with a fresh green salad

Delicious Lime Cheesecake

Ingredients:

120g of Shredded Wheatmeal biscuits

50g melted butter

200g low-fat mango and peach yoghurt

250g low-fat smooth ricotta cheese

1 egg

2 tablespoons of caster sugar

2 teaspoons of grated lime rind

¼ cup of wholemeal plain flour

2 cups of mixed fresh fruit (strawberries, blueberries, raspberries and blackberries)

Method:

  1. Preheat oven to 180°. Grease a 22cm tart pan. Process the biscuits until they become breadcrumbs, add the butter and process until well combined. Press the mixture of the base of your prepared pan. Place the pan on a baking tray and put into the fridge until required
  2. With an electric mixer, beat the yoghurt, ricotta, egg, sugar, lime and flour until well combined
  3. Pour the mixture over your biscuit base. Bake for 30 minutes or until set and the edges have started to brown. Remove from the oven
  4. Cool the pie in the pan, cover and place in the fridge overnight.
  5. Serve with your mixture of fresh fruit

First, let me say I am not a nutritionist nor medical professional of any kind. I am, however, diabetic having been diagnosed with type 2 diabetes in 1996. These recipes are a compilation of ones I have used since then.

Breakfast is one of our most important meals. Starting the day with a good breakfast gives us energy for the rest of the day. This is even more important if you are diabetic. Here then, are two of my favorite diabetic breakfast recipes.

Simple Diabetic Recipes

FRUITY BRAN YOGURT

Pick any fresh fruit...a small banana, medium sized peach, half a cup of fresh blueberries... whatever you like best. Toss it into a blender with 1 cup skim or non fat milk, 1/2 cup of plain non fat yogurt, about a teaspoon of vanilla extract, a teaspoon or two of sugar and 1/4 cup of your favorite bran flakes. I like to add about 1/2 cup of ice. Blend until smooth and pour into an 8 ounce glass or goblet. Sprinkle with cinnamon and wow! What a great and quick starter.

QUICK FRENCH TOAST

You don't have to give up on pancakes or french toast when you have diabetes. Just make a few substitutions and a great diabetic breakfast recipe is soon on your table.

For this one whisk 2 eggs, 1/4 cup of orange juice and a dash of salt in a bowl. Into a separate flat pan you will need either 1/2 cup of crushed bran or corn flakes, or some crushed pecans. Or you can mix the two together for added taste. Melt two or three tablespoons of margarine in a frying pan. Dip slices of whole wheat bread into the egg mix and then into your crushed dry mix and line the frying pan. Cook until brown on both sides. Serve with fresh peaches or blueberries as a topping. Who says cooking for diabetics has to be boring?

Here is a mini-cheesecake recipe that is very easy to make:

1 Cup of water
Unflavored gelatin
16 ounces of softened and cubed cream cheese
1 teaspoon of vanilla extract
3/4 cup of a sugar substitute
2 tablespoons of instant sugar free pudding mix

Sprinkle the gelatin over the water and let it stand for two minutes.
Microwave the mixture for 40-50 seconds and then stir.
Let mixture stand for a couple of minutes.
Add cream cheese cubes and stir some more.
Put in mixer and blend well.
Add pudding mix, vanilla extract, and the sugar substitute.
Pour into either muffin tins or 8" pie pan.
Put into freezer until firm.
